Baked Apple Pecan Breakfast

This warm fall delight is the perfect way to begin all those cool mornings. It’s healthy, flavorful and only takes about 5 minutes to whip together!! Try using a low fat plain yogurt for a lower calorie version of this 5-Minute Cinnamon-Pecan “Baked” Breakfast Apple. (If using a plain low fat yogurt, stevia or honey can be added to the apple to sweeten things up!)

Serves: 1 serving


1 large or 2 small-medium sweet apples, cored and chopped

3 tablespoons water

1/8 teaspoon cinnamon, plus more to sprinkle on top

4 tablespoons yogurt

2 tablespoons pecans, toasted and chopped


Stir the chopped apple, water, and cinnamon together in a microwave-safe bowl; microwave until the apples are tender (about 3 minutes).

Use potholders to remove the bowl, then top with the yogurt, pecans, and a sprinkle of cinnamon.
