Here’s a sweat treat to satisfy all your afternoon slumps and late night indulgences! Dates are naturally very sweet and therefore no sugar is needed when preparing these delicious Coconut Walnut Date Bites. Not to mention how the vanilla delightfully accents the caramel flavors in the dates!! Enjoy!
Serving size: 2 pieces

1/2 cup (56 g) walnuts
1/2 cup (30 g) unsweetened flaked coconut
3 oz (90 g) dates, pitted and chopped (about 12 to 14 Deglet Noor dates or 4 to 6 Medjool dates; remove the pits before weighing)
1 teaspoon pure vanilla extract
1 pinch sea salt
3 tablespoons unsweetened shredded coconut, for rolling them in
Add the walnuts, coconut flakes, dates, vanilla extract, and salt to a food processor and process until the mixture is finely chopped and holds together when you squeeze it into a ball. Roll the mixture into 8 balls and roll each in the shredded coconut. Serve or store in an airtight container in the fridge for up to 10 days.
