This Harvest Rice Pilaf is a great way to warm up to the season. It contains some amazing hearty flavors like cranberries, pecans and sweet potatoes and is made with nutritious ingredients that will warm you to the bone. Try this rice dish with your favorite protein!!
1 cup sprouted brown rice
1 cup quinoa
1 sweet potato, cut into 1/2 inch pieces
2 handfuls baby spinach
1/4 onion, chopped
1/2 cup dried cranberries
1/2 cup chopped pecans
1 cup chicken bone broth
1 1/4 cups water
1/3 cup balsamic dressing
1 tablespoon garlic, minced
1/2 tablespoon thyme
Salt and pepper to taste
1. In a pot, sauté onions and garlic.Stir in rice and quinoa.
2. Add water, bone broth, and all the ingredients except the balsamic dressing, spinach and pecans. Simmer over low heat for 30 minutes.
3. Fluff with a fork, add spinach, pecans, balsamic dressing and salt and pepper to your liking. Enjoy!!
