
Here’s a really healthy quick option for lunches if you’re trying to start eating healthier! They are flavorful and light and lentils really add a nutritious punch. The lentils are a great substitute for other lean protein sources and are more easily digested and the avocado is full of nutrients and healthy fats your body needs!

Cook time: 15 minutes
Makes: approximately 15 rolls
Ingredients
-5 tortilla wraps
-4 large avocados (de-stoned and peeled)
-1/2 onion, finely chopped (optional)
-2 limes, juiced
-2 large garlic cloves, crushed
-1/4 teaspoon of chili flakes
-Pinch of salt
-Handful of coriander (roughly chopped)
-2 Handfuls of tomatoes (roughly chopped)
-2 cans of Lentils (for ease of use, we used ready cooked lentils)
Directions:
Step 1- In a mixing bowl, add in the avocado, lime juice, crushed garlic, chili flakes and salt. Mash until smooth. Mix in chopped onion, if desired.
Step 2- Lay a tortilla wrap on a plate and spread over the guacamole.
Step 3- Sprinkle over some fresh coriander leaves, chopped tomatoes and the lentils.
Step 4- Roll up the tortilla and slice into rolls. Use cocktail sticks if desired to help the rolls stay in shape.
These can be packed for an easy lunch to go or made fresh when desired! You can serve them with salsa, light sour cream or anything else you’d like.
