
Here’s a healthy, balanced snack you can grab anytime. It’s light, fresh and cherries make the most delicious, super healthy sweet pick me up, especially after a savory meal!! The best part...it only requires a handful of fresh ingredients!
Serves 2-3 people
1 cup of cherries
1 tbsp of maple syrup
1/2 cup of plain coconut yogurt
Small handful fresh thyme
A few slices of your favorite bread toasted, or oven baked baguette slices
Cut the cherries in half and remove the pit. Add them to a small pan with the maple syrup and cook on medium heat for 10-15 minutes until the cherry mixture starts to thicken up, into a jam-like consistency. Remove from heat and let cool down for a few minutes. The cherry jam will thicken up even more if stored in the fridge. Toast the bread and spread a thick layer of coconut yogurt on top. Add the cherry jam, a few fresh sprigs of thyme and enjoy!
