Here’s the perfect summer dessert to give a try when your working hard to stick to your goals. These Raw Lemon Slices have the perfect tangy-ness to compliment any barbecue or hot summer night!
Raw Lemon Slice
Lemon Slice Base:
1/2 cup almonds
4 medjool dates
1/2 tsp vanilla
1 tsp maple syrup
1 cup cashews, soaked for a few hours
4 tbsp lemon juice
1/4 cup maple syrup
3 tbsp melted coconut oil
Pinch of turmeric
In a food processor, process the almonds to a fine grind. Add the remaining base ingredients and process again until a sticky dough is formed. Press the dough into a parchment lined loaf pan and set aside.
To make the filling, drain and rinse your soaked cashews. Place them in a high speed blender with your other filling ingredients and blend until completely smooth. Pour the filling into the loaf pan on top of the base, smooth it out and place it in the freezer to set for 2 hours before slicing.
Once set, top with lemon zest and serve slightly softened. Enjoy!
