
If you have a killer sweet tooth and need some healthy options to satisfy your cravings then this recipe is for you! This may look like a delicious dessert but the combo of healthy ingredients makes it a great balanced breakfast option!! This parfait is also a great way to start incorporating tart cherry juice which has been shown to increase strength and speed up recovery from workouts!
Tart Cherry Pineapple Cake Parfait
Ingredients
For the pineapple layer:
2 cups of chopped pineapple, fresh or frozen
pinch of sea salt
2 tablespoons of maple syrup
For the cake layer:
2 cups of almond meal
1/2 teaspoon baking soda
pinch of sea salt
3 eggs
1/4 cup honey
4 oz cinnamon applesauce
1 teaspoon vanilla
For the parfait:
4 oz yogurt mixed
4 oz tart cherry juice
Instructions
Preheat the oven to 350 and spray a 10×13 baking dish with nonstick spray or olive oil.In a large bowl, combine the pineapple, sea salt and maple syrup. Spread on the bottom of the baking dish in an even layer.
In a separate bowl combine the almond meal, baking soda and sea salt. Whisk in the eggs, honey, applesauce, and vanilla. Pour the batter on top of the pineapple, and bake for 30-35 minutes, until set and golden brown. Allow to cool slightly.
Build your parfait! Crumble some of the pineapple cake into a wine glass or tumbler, and then alternate layers of crumbled cake with your tart cherry yogurt.
