Thai Shrimp and Pineapple Cabbage Salad


When you’re looking for a healthy recipe thats quick and easy to make this Thai Shrimp and Pineapple Cabbage Salad will do the trick. This recipe is Paleo and Whole 30 with simple ingredients! Not to mention the Almond dressing is the perfect topper to spice up this salad favorite.


Makes 1 Serving

Total Time: 10 min


Ingredients:

2 cups purple cabbage

3 baby cucumbers, sliced

1/4 sliced bell pepper

1/3 cup pineapple tidbits (canned is fine)

12-14 large cocktail shrimp


Almond Dressing:

2 tablespoons almond butter (or sub for peanut butter)

2 tablespoons coconut aminos (can sub for tamari or soy sauce)

2 teaspoons fresh lime juice

1 teaspoon rice vinegar


Instructions:

Combine salad ingredients in a bowl.

Mix the dressing ingredients until creamy and smooth.

Add a splash of water to thin it out if needed.

Pour dressing over the salad and serve cold.

Enjoy!
