Get ready to get outside your comfort zone with this lightened version of Ferrero Rocher chocolates! These decadent chocolates are made with dates, hazelnuts and cacao to deliver that delicious chocolate hazelnut flavor we all know so well!!
1/2 cup pitted fresh dates
3/4 cup roasted hazelnuts, skins removed
1/3 cup digestive biscuits
3 teaspoons raw cacao powder
1/2 teaspoon vanilla extract
3/4 cup dark (78%) chocolate, melted, cooled slightly
Step 1 Place the dates in a heatproof bowl. Cover with boiling water. Set aside for 10 minutes. Drain.
Step 2 Place 1/4 cup of the hazelnuts, biscuits and cacao in a food processor. Process until coarsely chopped. Add dates and vanilla. Process until almost smooth but mixture still has a little texture.
Step 3 Line a baking tray with baking paper. Roll 2 teaspoonfuls of mixture at a time into balls. Press a whole hazelnut into the centre of each and re-roll to enclose.
Step 4 Coarsely chop the remaining hazelnuts. Place melted chocolate in a bowl. Use a fork to dip the balls in the chocolate to coat. Transfer to prepared tray, draining off excess chocolate. Sprinkle with chopped hazelnuts. Place in the fridge until set or ready to serve.
